Here is a great self-paced course on open educational resources (OER).
Like Moodle, Canvas is a learning management system that has both commercial and open source options. While it can be a little complicated to install it is an intuitive and easy to use LMS for faculty and students. Canvas can be used in off-line environments.

This University of Colorado sponsored site contains thousands of interactive science simulations available for offline installation. Just click “Full Installation” and you are good to go.
